The Pomme Prisonnière is a unique Calvados, and one of the most difficult to produce.
How is the apple placed inside the bottle?
As early as April, the apple trees are covered with white and pink blossoms. In May, the fruit begins to form at the heart of the fading flower. Unfertilized fruits abort and fall after flowering. Only 5% of the fruit embryos will eventually develop into apples.
Waiting until the fruit has finished falling before placing the young apples inside the bottle means taking the risk that the neck of the bottle will prove too narrow. Introducing it too early, however, is almost certain to result in failure!
The real challenge is to determine the precise moment when the bottle must be suspended from the branch and the small apple introduced inside, where it will continue to grow throughout the summer.
At the end of September, the bottle is detached from the tree, carefully cleaned, and filled with Lelouvier Calvados.
During the long months of maceration, the apple's flavors gradually blend with those of the Calvados.
To preserve the Pomme Prisonnière indefinitely and maintain its original brilliance, simply top up the bottle with Calvados before the level becomes too low.
